Do you know TouchOSC? http://hexler.net/software/touchosc
You can use the "OSC Receiver PlugIn" for DMXC to receive the messages from TouchOSC.

Hi,
there are different Apps for different plattforms which work together with DMXC. For iOS there is a tool called "Touch OSC". It sends OSC-Messages and can control DMXC. I think this app is in the App Store. Here ist their homepage. Also there are other apps for iOS but I don't know their name.
Regards
JP
Edit: Damn, anotherone was faster than me
